From triple-distilled smoky malts to maritime botanicals infused at low ABV, every spirit reflects a balance between age-old wisdom and forward-looking creativity. Our copper stills echo Donegal’s past, while shaping the whiskeys and gins of tomorrow.

Today, the same passion for flavour and authenticity is guiding a new chapter in Irish spirits.

At Ardara Distillery, the approach begins with respect for grain and fire. Instead of the mash tun, all grains go directly into the wash, preserving character and texture that might otherwise be lost. It’s a nod to older, less commercial methods, revived for a modern audience seeking depth and individuality.

The stills themselves — copper giants forged by Forsyth’s — stand at the heart of the process. Here, careful cuts define the spirit’s balance: too wide, and the whiskey becomes soft; too narrow, and it grows sharp. The result is a profile where smoke from Donegal’s turf intertwines with natural sweetness, creating something unmistakably local.

A revival rooted in place, shaped by heritage and the wild Atlantic

Infusing them with a sense of place that no barrel, recipe or technique alone could ever achieve.

The turf cut from bogland, the wild Atlantic air, the sharp winds rolling off Slieve League, all these elements weave themselves into the character of Ardara’s whiskeys and gins. To taste them is to taste the landscape.

Visitors often remark that the distillery feels both modern and ancient: copper gleaming under bright light, but with an atmosphere of stories stretching back generations. It’s this balance, innovation anchored in heritage, that defines the revival.
